I love rainy days…they give you the chance to catch up on anything except exercise. Yesterday I spent the day reading, relaxing and watching some TV. Today it’s study central (not as much fun).
One thing we did last night that made me VERY happy was make dinner! My boyfriend and I were kind of in the mood for Thai food but to spare our wallets I decided to try and make pad thai from this recipe that I found through Cooking Light magazine. It was delicious- we swapped out the shrimp for chicken but otherwise made it as listed. In the future, I might add some extra veggies to make it healthier. For the double batch that we made which will feed us at least 4 meals, it cost us about $23 for all the ingredients* plus we’ll have extra for the next time!
And last but certainly not least, happy birthday Matt- hope 24 is the best year yet!
*(4.50 for noodles, 4 for chili garlic sauce, 4 for fish oil, 2 for bean sprouts, .39 for a lime, 2 for the green onions and the rest we already had at home but I’d estimate cost about 6)
